I was recently intrigued by someone cooking a stew inside a pumpkin on the campfire. After unsuccessfully trying to duplicate their efforts, I saw this recipe. Serving the soup from the pumpkin shell into pumpkin bowls sounds very unique.

Baked Pumpkin Soup

Clean and quarter a pumpkin. Bake for 45 minutes at 350 degrees, or until meat of pumpkin is soft.

Saute one small, diced onion in saucepan, add about 3 cups of pumpkin meat, 2 large peeled and quartered potatoes, a pinch of nutmeg, 1 bay leaf and 6 cups of chicken stock. Bring to a boil and simmer for 30 minutes.

Remove bay leaf and puree in blender.

Clean out another, larger pumpkin to use as a serving bowl. Cut the smaller pumpkins in half from stem to bottom to use as serving bowls (complete with stem handle). Top with chives and croutons.
